BBQ Ribs, Latina style

Here’s a recipe for BBQ Ribs, Latina style.

Costillas con guayaba a la barbacoa (Spicy Guava Barbecued Ribs)


4 to 5 cloves garlic, minced
1 1/2 tsp. oregano
1 1/2 tsp. salt
1/4 cup red-wine vinegar
2 lb. pork or beef ribs
1/4 cup finely chopped onion
1 tbsp. dry sherry or table wine
2 tsp. molasses or honey
2 tsp. soy sauce
2 tsp. ketchup
1 tbsp. guava or strawberry preserve
1/4 cup guava puree
1/8 tsp. cayenne pepper
Preparation: These juicy ribs can be grilled on the barbecue or baked in the oven. Combine garlic, oregano, salt, and vinegar and mix well. Add ribs to this marinade, being sure to rub mixture onto all sides. Cover and refrigerate at least 2 hours or overnight. Drain ribs and discard marinade just before grilling or baking.

To make guava glaze, combine onion, dry sherry or table wine, molasses or honey, soy sauce, ketchup, guava or strawberry preserve, guava puree, and cayenne pepper and stir well.

Grilling: Grill ribs over medium-hot coals 45 minutes to 1 hour. Brush with guava glaze during the last 5 to 10 minutes of grilling.

Baking: Preheat oven to 400°F. Place ribs in shallow baking dish with rack and bake, uncovered, 1 hour. Brush with guava glaze and bake another 5 to 10 minutes. Makes 4 servings.
