A Latina’s BLT: The CLT Sandwich

Is your PB & J looking more sad and boring by the second. Need to add some flavor to your lunch? Here’s a Latina twist on the traditional BLT. It’s so delicious and incredibly easy to make in the morning, it’s great to take to work for lunch. It beats PB & J’s butt any day. Buen provecho!

CLT Sandwich

Ingredients:
1-2 tbsp. Canola oil
1/2 cup thinly sliced chorizo or your preferred spicy sausage
Onion slices
Mayonnaise
Shredded iceberg lettuce
Fresh tomato slices
2 slices toasted whole wheat bread
1/3 yellow pepper, coarsely chopped

Preparation
Coat bottom of skillet with oil and set over medium-high heat. Add chorizo rounds, peppers, and onions and fry 1 minute, while stirring, or until rounds brown and curl slightly. Drain onto paper towels. Spread mayonnaise on each toast slice and top with lettuce, tomatoes, chorizo, peppers, and onion.

Yield: Makes 1 sandwich.
